5 medium potatoes, rough chopped, not peeled (I prefer Yukon Gold)
1 large yellow onion, rough chopped
2 cups dried yellow split peas (I prefer Goya)
6 cups of vegetable broth
1/2 tsp celery seed
1/2 tbs salt
1/2 tbs black pepper
1/4 cup Earth Balance Original Natural Buttery Spread Vegan Butter
Combine all ingredients except for the vegan butter into a pot. Bring to a boil and then lower to a simmer.
Allow to simmer for approximately 1.5 hrs.
The ingredients will begin to break down in to a mush. (I know that doesn't sound good, but trust me!)
Remove from heat, add butter and stir until melted.
Allow to cool.
Pour mixture into blender.
Blend on liquify setting for 45 second per batch. (Or until mixture is running fluidly through the blender)
The completed soup with be thick and silky smooth.
Add pepper or salt to taste.
