Instructions
Meat Sauce & Cheese Mixture
  1. Lasagna Baking Dish should be approximately: 14.25"Long x 10"Wide x 3" Deep
  2. Cook the ground beef and ground sausage until browned.
  3. Add in the tomato sauce and stewed tomatoes, the sugar, oregano and yellow onion.
  4. Allow the mixture to come to a low boil. Simmer for 5 minutes. Set aside.
  5. Keep aside approximately 1/2 cup of sauce only from the meat mixture. This will be for the final layer of the lasagna.
  6. Cook noodles as directed on the package.
  7. While noodles are boiling, combine the ricotta, cottage cheese and the 2 eggs together in a bowl.
  8. Combine in a separate bowl: the 3 cups of Gouda, 3 cups of Fontina cheese and 2 cups of mozzarella cheese.
  9. Keep two cups of the Mozzarella cheese aside, this will be added in the last 10 minutes cooking.
  10. In lasagna pan: Layer noodles, meat mixture, cheese mixture, Gouda/Fontina/Mozzarella mixture, then repeat noodles, meat mixture, cheese mixture, Gouda/Fontina/Mozzarella mixture - final layer should end with noodles on top - drizzle sauce on top to keep noodles moist.
Baking
  1. Preheat oven to 375°.
  2. Cover lasagna with foil.
  3. Cook lasagna for 40 minutes at 375°.
  4. Remove lasagna from oven. Remove the foil and add one final layer of mozzerella cheese. Do not cover with foil when returning to the oven for this final step.
  5. Increase your oven temperature to a low broil.
  6. Put lasagna back in the oven for approximately 5-10 minutes. Don't forget no foil! You must watch it carefully at this point. Check for the cheese to melt and begin to crisp. Broil to desired doneness and remove.
  7. Let the lasagna set for approximately 10 minutes.
  8. Serve with fresh basil! Enjoy!
  9. ***Each serving size is about 3" x 3". This lasagna is very "deep", so I'm able to cut into about 15 servings. 5 columns and 3 rows. These may be quite large servings.
