Super easy, side dish (or snack). Stumbled upon this concoction, when I had a bit of ginger left over from another recipe.
Honey Ginger Carrots
Pre-heat oven to 450 degrees
Add the carrots, honey, ginger and extra-virgin olive oil to a baking pan.
Baked covered with tinfoil for 40 minutes
Remove from oven, toss carrots lightly, and serve!
