Fontina & Preserved Lemon Grilled Cheese Sandwhich
Meyer lemon, preferred
Place bread slices on work surface.
Divide the cheese and as much of the shallots as you would like between the two sandwiches.
Top with as much of the marinated lemon.
Season with salt and pepper.
Heat 2 teaspoons olive oil on medium-high heat.
Add the sandwiches and cook 2-4 minutes on each side or until the bread has browned and the cheese has melted. (If the pan seems dry add an additional 1 tsp of olive oil.)
Serve and enjoy!
Peel and slice one lemon.
In a bowl, combine the slice lemon, sugar and a big pinch of salt.
Set aside to marinate, stirring occasionally, for at least 5 minutes.
